(Paleo) Savoury Muffins


Paleo Savoury Muffins
(Gluten, dairy, nut, soy, corn... Free )
 
Ingredients:
6 eggs
2 tbs melted Nuttlex (butter substitution)
3 tbs rice milk

Whisk those together in the bowl first 

Ingredients cont
1/2 cup or more diced up bacon 
1 grated zucchini 
1/4 cup shallots
Handful of well chopped baby spinach leaves 

Mix all together in the bowl. 
 

Spoon into patty pans in a muffin tray. 

Cook in a preheated 170degC (fan forced) oven for about 15-20 mins. Keep a smell out for them when they smell cooked and look delicious. 

Allow to cool a bit, if you can show restraint.

Banana Nut Muffins (Gluten free/Dairy free)


Gluten Free/ Dairy free/ Refined white sugar free. 


        Banana Nut Muffins. 
Dry ingredients: 

Equal parts to measure about 1 and a half cups total: GF SR. Flour/almond meal/walnut meal. 

Wet ingredients puréed together:

Handful of dates (boiled and strained to soften a touch)
2 medium ripe bananas
1tsp Manuka Honey
3 tbs Coconut oil 
2 eggs 


Mix the puréed wet ingredients into the dry bowl. 

Spoon into patty pans 

Cook for 15mins-ish in a preheated  170*degrees C oven. Till it smells cooked and looks good. 

Allow to cool. 

*Adjust the measurements as you desire. I just throw it all in, so I don't have exact measurements, until it's a nice wet batter

The Name Game

I have loved this pregnancy, it has absolutely flown by. I'm 30 weeks now, did you know that! Crazy right! 

We have been given practically everything we need for this little bubs arrival and even more than that she has clothes to last her till she's at least 5! Her wardrobe is busting at the seams, I've had to shrink bag all the different sizes just to fit it into her room. Which, for a nesting mumma is actually quite fun! Touching and folding all those little items... Cue lots of oohhh's and ahhh's and I can't believe she'll fit this one day's. 

There's just one thing that's been challenging. 

Her name. 

Finding the perfect name is hard! For months the thought of looking at names lists just made me want to puke. Meh! Don't even want to. So now that I've reached 30 weeks and I could have anything from 7 to 12 weeks left I figure I better bite the bullet and start writing a list. 

But where do you start??!!! 
Vintage and hipster names seems to be all the rage at the moment. From Florence, Amoret, Maybel and Vivian. To Apple, Wyatte, Willow, Haven, Shiloh, and Blue. 

Then there's all the questions regarding each name... 
What are the nicknames?
What are the bad nicknames? 
What's it's meaning? 
Does it flow with our last name? 
Does hubby and I agree on it? 
Will the kids be sad we didn't decide on Elsa or Ana? 

Yeah we are no where close. 

Oh geesh. I have decision fatigue.
