Dairy free Custard

We have dairy allergies/intolerances in our family so I've adapted a normal thermomix custard recipe to suit our dietary needs.

I've used my thermomix, but a simple pot on heat, and a hand held electric mixer will probably do that same (tho I cannot tell you how long etc as I haven't tried it personally.) 

90g sugar 
50g cornflour 
3 eggs 
500g/ml Rice Milk 
1 drop of vanilla essence 


Place sugar and cornflour in Thermie bowl, mill. 10sec/speed 9. Scrape down sides. (If not using a thermomix, use Pure Icing Sugar) 

Add all other ingredients and cook for 7 mins/90 degC/speed 4. (Non-thermie: beat everything all together over a medium/high heat, stirring continuously for however long it takes to transform to custard.) 

Serve straight away or cool and store in the fridge for when ever.

Recipe is free from
Gluten, Dairy, Soy, Nuts. 
(Choose your cornflour wisely some are not gluten free)

Egg, Corn. 
(I'm still experimenting to get a corn free version!)
