Allergy Friendly Cupcakes


Now first off... note that I didn't say Health-friendly cupcake, I said Allergy friendly.
There is still white sugar and barely any nutritional value like every other cupcake. The difference is, this one is: 

Gluten Free, Egg Free, Dairy Free, Nut Free, Soy Free, Corn Free... 
and super yummy for parties and that's what matters! 

I made these for Milla to take to her Kindergarden end of year party. What I love, is these taste great and look great. She can be proud to share them with her friends who are not used to eating allergy friendly foods. 


Beautiful texture! Light and fluffy! 


OK Gather your ingredients!

Cupcake Ingredients:

125g Nuttelex (Dairy-Free Marg)
125g Caster Sugar
3 "No Egg" egg replacer
1 cup GF self raising flour (I use Choices)
1/2 cup rice flour
3 TSP GF baking powder
3/4 to 1 cup Rice Drink


Oven on to 180*C (350*F) at this point most people tell you to get your patty pans ready... I'm never that organised! So at some point get your muffin tray out and put cupcake patties in them.

Use an electric mixer to whip the Nuttlex and sugar until it's light and fluffy. While that's whippin' real good. Mix your 3 "No Eggs" together with it's water in a different little bowl, let it sit for a min to congeal. Whip it into the Nutelex/Sugar fluff.

Sift all the dry ingredients onto the sugar fluff and add the Rice Drink. Use your spatular and fold it all together, once folded together turn on your mixer and give it a good whip for a min. 

Spoon the mixture into those patty pans that you forgot to get out, quick go get them, fill the patty pans to just under the edge, semi smooth down the tops. 

Bake for 15-20mins (or until cooked) 

Allow to cool for a bit before Icing. 



Ice Ice Baby....  Fluffy icing for on the top

Icing Ingredients:

about 100g Nuttelex
about 1 cup PURE Icing sugar 
1/4 cup Rice Drink
GF Sprinkles.


Put a big blob of Nuttelex into your mixer bowl and whip it till it changes to a lighter colour. Light and fluffy. While its whipping pour in slowly the Pure icing sugar and Rice Drink. Whip it for about 3 minutes, so that it's gorgeous.  

Put it in a pipping bag.. or in a zip lock bag like I do, snip off the corner and ice those now-cooled cupckaes

Decorate! (Be aware of ingredients in those decorations! Make sure they are GF etc)



Again, these are definitely not an everyday eating, but perfect for (unsuspecting guests err I mean) Parties and such.
