Cooking With A Toddler- Gluten Free, Egg Free, Dairy Free Banana Muffins

I needed to make some Banana Muffins today for Phoenix (aka Distructor/Sticky Fingers). Here we go!! Cooking with my toddler, Gluten free, Egg free, Dairy free, Banana Muffins. Wish me luck! Or call me stupid either way!

First things first... Ask yourself this question... Really? Do you really want to? Ha! See this face? Cheeky Munchkin... Be prepared!
  
My boy touches everything so my best bet was to be as prepared as possible. The more clutter- the more stressed and claustrophobic I feel, so I did the dishes and put away everything unnecessary. 
1. Everything away
2. Get everything measured out and ready- before inviting Sticky Fingers to help
3. Ingredients all measured out and in plastic containers ready to go.

Gluten Free, Egg Free, Dairy Free Banana Muffins! (Take 1)

125g Dairy Free Butter/Margarine 
1/2 Cup Brown Sugar
2  "Eggs"  
1/2 tsp Vanilla Essence 
1 1/2 Gluten Free Self Raising Flour
1/4 Rice Milk 
1 Mushy banana

1. Beat the first four ingredients 
2.  Mix in the last three. 

Muffin it up and in the oven for 10mins, 180DegC.

Now I'm still perfecting this recipe. Gluten free recipes tend to be a bit more um... gluggy/chewy? So these turn out pretty good- but you do have to let them cool completely before eating. Which kinda helps to make them a little less chewy.

This is the "Eggs" I'm talking about. Natural Egg replacer.

Now all you, don't judge me cause I didn't make this a "learning about textures" and a "mess everywhere" kind of baking day... Gluten free flour is expensive!! There is no room for mess when it costs a pretty penny for a little box of flour. Maybe tomorrow can be mess everywhere Play dough making day! (using .99c plain flour!)
